Fresh Autumn Truffle - tuber Uncinatum

Autumn truffles are available from mid September – early March. Autumn truffles have a sweeter milder flavour than winter truffles. 

They have the longest season of the truffle varieties. Autumn truffles are found all over Europe and English truffles are some of the finest. Before the First World War Britain had a thriving truffle industry. Sadly, with the loss of so many men in the Great War the skill for truffle hunting were lost and almost forgotten. As far back as Roman times English truffles were prized and even sent back to Rome. Autumn truffles are found in lower lying woodlands and have a strong sweet aroma nutty flavour with hints of vanilla. Use liberally or make truffle butter to obtain the best from these truffles.

Clean before use with a soft toothbrush under cold water. Dry with a paper towel and allow to warm to room temperature before using, just as you would with a cheese to maximise the flavour.
