Fresh Winter Perigord Truffles - tuber Melanosporum

Available from late November until late March and again from June to August. Black Winter truffles are also known as Perigord truffles after the famous region in France where they were traditionally found. Today ‘Perigord‘ truffles are grown in plantations in many countries of the world. A truffle plantation is an orchard of oak trees that have had their roots impregnated with the spore of the black truffle – tuber melanosporum. These truffle plantations can be found in both the northern and southern hemispheres. This means we have them available twice a year. The advantage of plantation truffles is they are irrigated so ensuring excellent quality every season.

Clean before use with a soft toothbrush under cold water. Dry with a paper towel and allow to warm to room temperature before using, just as you would with a cheese to maximise the flavour.
