In the Umbrian Gold Chocolate Collection, Joan Coukos of Chocolat Moderne has teamed up with renowned chef Marc Murphy to create six exquisite new bonbons inspired by Murphy’s Umbrian Gold Extra Virgin Olive Oil. 

Umbrian Gold is a premium, cold-pressed extra virgin olive oil sourced from the sun-drenched hills of Umbria, Italy.   Harvested at the peak of ripeness, its three different olive varietals create a balanced taste that harmonizes fruity, peppery, and slightly bitter notes. High in antioxidants and monounsaturated fats, it is as healthful as it is delicious!

In the collection, olive oil is transformed into a confection in the form of olive oil pâte de fruit and is layered onto six different chocolate fillings encased in milk, dark or white chocolate.  As you approach each piece, the impact of first feeling the lusciousness of the olive oil and then enjoying the rich layer of chocolate provides a heightened sensory experience.

We chose flavors evocative of Italy and Umbria in particular - where Perugia is known for its chocolate and hazelnut “Baci”.  We start with plain dark and milk chocolate ganaches as a base for taste comparisons, then add chocolates with hazelnut and espresso fillings.  Finally, the white chocolate bonbons pay homage to popular Italian olive oil cakes.

White, milk and dark chocolate (sugar, cocoa butter, cocoa beans, whole milk powder, sunflower lecithin, natural vanilla), cane sugar, olive oil, water, cream (milk), glucose, hazelnuts, butter (milk), lemon juice, orange juice, fruit pectin, vodka (from corn-added to preserve freshness), emulsifier (from citrus), citric acid, espresso, salt, cornstarch, lemon oil, orange oil. Decoration: cocoa butter with color added. May contain: other tree nuts, peanuts, and/or minimal alcohol.
