2 tablespoons butter
3 onions chopped
1 tart apple, chopped
1 green pepper
3 stalks celery, chopped
1 or 2 cloves of garlic
Salt
1 pinch cayenne pepper
1 tablespoon curry powder
6 cups chicken stock
1/2 cup rice
2 tablespoons lemon juice
watercress leaves

Cook the chopped onions in butter until soft (but not brown), add chopped celery, garlic, green pepper and cook a little longer; season and dust with curry. Add the chicken stock, cover pan, and let simmer for about 1/2 hour before adding rice. Then cook 20 minutes longer. Mix the soup in a blender, with lemon juice. Serve with a few watercress leaves on each serving.
