Sakabukuro were once used in the purification process of sake. Though leathery in appearance, they are made of cotton, which is then treated with persimmon tannin, kakishibu, to make them waterproof. The dense stitching of the cotton, coupled with the persimmon tannin treatment, allowed for the crude sake pressed through these bags to be separated from the rice particles, and have a greater clarity and quality.
