Opal Valley delivers the highest quality without compromising the delicious sweet, yet mild taste of pasture fed lamb. That said, this is much gamier than our American lamb. 

SIZE

Domestic Lamb is larger than Australian Lamb. While both have 8-9 chops, the Australian is a little over half the size of the American Lamb. We recommend one rack for every 2 guests, if American Lamb you could do one rack for 3 guests or even 4.

This is a great dish for easter.
