This is restrained to the point of being almost mute and it requires aggressive swirling to coax notes of airy mineral reduction, citrus rind and plenty of seashore nuances to reveal themselves. The slightly richer and rounder flavors possess somewhat finer texture though at the expense of less minerality and detail on the clean and bone-dry bitter lemon-infused finale that isn’t quite as complex. Even so, this is still excellent.
